There is this preconceived notion that if you’re vegan or vegetarian that there is nothing for you to eat. I’ve been told countless times, “if you’re not eating meat, then what are you eating?” Tacos, I eat tacos. I tend to eat a lot of tacos in the realm of…daily. There is a Qdoba by my job and they offer an amazing kids meal. It’s cheap, fresh and delicious. Although I love tacos, I love them in different ways. Today I’m sharing a new way to mix up the essence of tacos. Buffalo cauliflower tacos will have you going back for more. About as much as I go to Qdoba.

These buffalo cauliflower tacos are the perfect recipe to make for a quick and easy night weeknight meal. Also, the actual recipe is vegan but I chose to add blue cheese crumbles and avocado ranch, which makes this a great vegetarian dinner idea.

Ingredients For Buffalo Cauliflower Tacos

  • Cauliflower
  • Buffalo Sauce
  • Garlic Powder
  • Onion Powder
  • Salt & Pepper
  • Chicken Seasoning
  • Olive Oil
  • Flour Tortillas
  • Optional toppings
    • Avocado
    • Blue Cheese Crumbles
    • Avocado Ranch Dressing
    • Lettuce
    • Tomatoes
    • Red Onions
    • Fresh Cilantro
    • Green Onions

After I get home from work and help my son with homework, I definitely do not want to cook. That’s why I aim for a quick option when making dinner during the weeknight. These were done in no time. Add seasoning, oil and about half of the buffalo sauce and throw in the oven.

A couple of my cauliflower pieces we big, I’d cut them smaller next time. This will reduce the cooking time and make sure they are evenly cooked.

While they bake, you can get everything else together. You’re only baking them for about 20 minutes. See, it’s like a 30-40 minute time frame to create this dinner idea.

Once they’re done in the oven, pour the remainder buffalo sauce and assemble your mouthwatering, handheld, explosion of flavor.

I have another head of cauliflower in the fridge, I had an idea what to make with it but I think I may have to make these again. They were that good!

Ingredients

  • 1 Head of Cauliflower
  • 3/4 Cup of Buffalo sauce (or more if preferred), divided
  • 1 Tbsp of Chicken or Veggie Seasoning Mix
  • 1 Tbsp Garlic Powder
  • 1 Tsp Onion Powder
  • Salt and Pepper to taste
  • topping ideas
  • Blue Cheese Crumbles
  • Dressing (I used Avocado Ranch)
  • Red Onions
  • Avocados
  • Tomatoes
  • Lettuce

Instructions

  1. Preheat oven to 420
  2. Cut cauliflower into small pieces
  3. Mix cauliflower with olive oil and seasoning
  4. Mix with 1/4 cup of the cauliflower (add more if more needs coated)
  5. Place cauliflower onto greased baking sheet
  6. Bake for 20-25 minutes. Turning cauliflower half way through
  7. Remove from oven and add remainder of buffalo sauce
  8. Assemble Tacos and enjoy
