Vegan Tacos: Quinoa & Black Bean Taco Filling

I can talk about tacos all day. Pretty sure I have an infatuation with them. Never do I get tired of them and I’m always down to eat one. Literally, my friend and I get tacos at lunch everyday. Qdoba has an amazing kids meal that cost $4 and they don’t question my age. They’re wonderful. And we’re on a first name basis. True story. They also have fresh ingredients and offer an amazing vegetarian taco (the Bohemian taco). Just because I eat tacos at lunch everyday, doesn’t mean I don’t make them at home. I make these amazing vegan tacos that keeps my child asking for more.

Vegan Taco Meat

The filling is along the lines of what you may be use to eating if you’re use to eating meat. The flavor is all there, but remains plant-based. You can make it vegetarian by adding dairy cheese, which is what we did when we made it. When I make it this way I tend to use the hard taco shells and make it more of a comfort option.

Typically, I exclude the cheese and pair it with pico de gallo and guacamole with a regular corn tortilla. Still packed with flavor but more on a healthier spectrum.

This recipe is quick and easy. Great for a weeknight meal. Well, in my case, any night. It takes less than half an hour from start to finish. This works out great for me since I like my weeknight meals to be quick after a long days work and quick on the weekend so that I can actually enjoy my time.

I add about 1/2 a cup of salsa and then spice it up with cumin, chili powder, garlic powder and then salt and pepper to taste. I personally make a big batch of dried black beans a head of time and freeze in 1/2 cups bags (I use my sealer). If you’re using dried beans, you would need to prepare them ahead of time. However, if you’re using canned black beans then you would need to drain and rinse them.

The best part is that there will probably be left overs for the next day.

Which also makes my son happy.

This was the perfect quick meal before we went on our mother-son date night. We went to a local theatre to see the musical Disney’s Newsies. But again, any time is a perfect time for tacos!

Ingredients

  • 1 Cup of dried Quinoa
  • 2 Cups of Water
  • 1/2-1 Cup of Black Beans (prepared. if using canned beans drain and rinse them)
  • 1/2 cup of salsa
  • 1 1/2 Tbs of Cumin
  • 1 Tbs garlic Powder
  • 1 Tbs Chili powder
  • Salt and Pepper to taste
  • Tortilla shells
  • Toppings

Instructions

  1. Add water and quinoa to pan and bring to boil. Reduce to low heat. Simmer for 20 minutes
  2. Add black beans and combine
  3. add salsa, cumin, garlic powder and chili powder. Combine
  4. Add salt and pepper to taste.
  5. add taco filling to taco shell and top with your favorite toppings.
